Zucchini Dip with Greek Yogurt Recipe

This recipe will take you more time in the long run since it needs to sit and marinade, but the preparation is so quick and easy that you'll be serving it all the time as a great dip. This dip is best when served with slices of tomatoes or eggplant or with whole wheat crackers.

Packed with fiber, this summer squash has myriad health benefits. Zucchinis have zero fat and provide vitamins A and C. The Greek yogurt also makes it a great healthy and tasty treat!

Prep Details

Servings: makes 2 cups


2 small zucchini, cut into 1/4-inch cubes
Small sprinkling of chopped chives
2 cups plain Greek yogurt
Oregano, to taste
Garlic powder, to taste

Combine the zucchini, yogurt, chives, oregano and garlic powder. Cover with plastic wrap and chill in the refrigerator for at least an hour.

Serve slightly chilled or at room temperature for maximum taste!
