A fruity take on traditional Mexican horchata, I throw fresh strawberries into the mix for a creamy and non-dairy treat. Adjust the amount of rice you add according to your taste.
1 cup Uncle Bens Rice, cooked and chilled
1/2 pound strawberries, hulled and halved
1 tsp. vanilla
1 cup coconut milk
1/2 cup ice
1. In a blender, puree Uncle Ben’s rice, strawberries, vanilla, and coconut milk until smooth. Add more coconut milk or rice to reach desired consistency.
2. Serve immediately.
