Marian's Steak and Dirty Rice

Servings: 2-3

Ingredients

DIRTY RICE

2C Jasmine Rice (washed)
4C Chicken stock
1 Carrots (diced)
1 Small yellow onions (diced)
1 Red bell pepper (diced)
6oz Ground beef
4oz Chicken liver
3/4 tsp Fresh garlic (minced)
1C Scallions (sliced)
1T Fresh Thyme (picked)
1tsp ground clove
Salt and pepper TT
¼ c butter

PEPPER STEW

4pcs Celery (small diced)
2m Carrots. (small diced)
2sm Onions (medium diced)
4 lrg Red Bell peppers (large dice)
3 cloves of garlic (minced)
1-3 Habanero peppers (minced)
3 tomatoes (crushed)
1B Thyme (picked)
1lbs Smoked turkey
4oz Tomato paste
32oz beef broth
1oz Oil
¼ C Smoked paprika
1B Fresh Parsley (chopped)
Salt & pepper to taste

STEAK

4 pcs of Thinly sliced flank steak (you can ask your butcher to slice it)
Seasoned steak with salt and black pepper. In a medium sauce pan, add steak and cook to desired doneness. Set a side for later.

PARMESAN PANKO CRISP (GARNISH)

1c panko bread crumbs
1c grated Parmesan cheese
3 cloves garlic (minced)
1/4b fresh parsley (chopped)
1tsp butter or olive oil
2 pinch salt

Directions

DIRTY RICE

Melt butter in pot on medium high heat, sweat the vegetables, garlic and thyme til soften. Add ground beef and crushed livers, cook til meat has browned. Season with salt, pepper and ground clove. Stir in rice making sure all of it is coated with veggie mixture. Add stock, cover and cook for 20mins or til rice is tender.

PEPPER STEW

In heated pot pour oil, then sweat onions, celery, carrots and 2 of the bell peppers, smoked turkey and thyme for 1min. Toss in garlic, habanero and tomato paste, cook for another min while stirring. Add crushed tomatoes and broth; bring to a simmer. Next add the rest of the ingredients. Reduce heat to low heat setting. Taste and adjust seasonings to desired taste.

PARMESAN PANKO CRISP (GARNISH)

Combine all ingredients in small pan and toss til bread crumbs are golden. Set a side for later.

PLATING

In a serving platter, place pepper stew down, then top with dirty rice. Next take cooked steak and layer on top of rice. Garnish with the toasted bread crumbs.
