Valedon And Sauternes


Valedon is an intoxicatingly good blue cheese. Pungent and salty, it is made from both cow and goat's milk and wrapped in Sycamore leaves that give it a complex flavor. Though not the strongest of blue cheeses out there, Valedon packs a punch.

Though it can certainly provide gustatory adornment as a steak sauce, Valedon can be equally relished with dried meats and a glass of Sauternes as a dessert. This golden-yellow elixer is made from a blend of green grapes and give hints of apricot and honey. The sweet and fruity tones create an excellent balance with the tang of the blue cheese.

Serve your Valedon after it has aired out a bit and the Sauternes chilled for maximal enjoyment.
