What To Do With All Your Easter Eggs

Dyeing Easter eggs is a festive April event-but now that the holiday's over, what are you going to do with all those eggs?

If you blew out the eggs, then you'll have a lot of raw eggs in the fridge. For a post-Easter breakfast, serve an open-faced Gouda, prosciutto, and egg sandwich. Dinner calls for a heartier dish-this warm quinoa salad with spinach, poached eggs, and caramelized onion makes a wholesome spring meal. Sometimes though, you just want breakfast for dinner.
