Ingredients: 1 3/4 cups all-purpose flour 1 1/2 cups almond flour 1/2 teaspoon salt 1/2 pound (2 sticks) unsalted butter, at room temperature 1/2 cup sugar About 1 1/2 cups blanched whole almonds
1. Sift the flour, almond flour, and salt into a bowl; set aside.
2. With an electric mixer, cream the butter and sugar in a large bowl.Â Add the flour mixture and beat until combined.Â Turn the dough out onto a lightly floured surface and knead for 1 to 2 minutes, until the dough forms a ball.Â Wrap in plastic and refrigerate for 15 minutes.
3. Preheat the oven to 325 degrees F.Â Line two baking sheets with parchment paper or grease them with butter.Â Shape the dough into 1-inch balls and arrange on the baking sheets, leaving about 2 inches between the cookies.Â Press an almond into the center of each cookie, flattening it slightly.
4. Bake for 10 to 15 minutes, until golden.Â Remove from the baking sheets and cool on a wire rack.
