From Farm to Fork Summit

On Wednesday, the Swedish-American Chamber of Commerce hosted it Annual New York Green Summit. Since declaring in 2008 their decision to "go green," the Swedish-American Chamber of Commerce has held this summit addressing the issues necessary to promote environmental and sustainability issues.

This year's focus was sustainability in the food chain and appropriately named "From Farm to Fork." The summit explored issues that surrounded the benefits of commercial sustainability in all aspects of the food industry. It brought together some of the world's leaders in sustainability research and company practices that promote a greener food world and ultimately a healthier population. Big names in the food world like Chefs Magnus Nilsson, Tim Zagat, Kate Krader joined me in welcoming the Chamber's most honored guest, His Royal Highness, Prince Daniel of Sweden.

The summit involved an information-filled conference held at the Citibank Auditorium where commerce leaders and top academies discussed ideas in promoting sustainable green practices in the food industry. Each discussion and panel was appropriately held in "courses" (First course, Second, Dessert, etc) with each course addressing a different facet of the 'green' argument. Such facets included innovation in food systems design, public health safety, targeting the new consumer, and the new trend of sustainable cooking.

As Prince Daniel noted in the conversation, food is important and finding new ways to make sure it stays sustainable should be as equally important in this day and age. Tim Zagat also mentioned, 80% of people surveyed, want their food to come from sustainable means and with such a rise in the 'green' movement in today's younger generation, people today may just be willing to pay for such improvements in the food industry. Of course a lot be done to not only learn about new ways to build a more sustainable future, but also to make these efforts affordable and ensure that they are here to stay.
