This week started off great this morning as I joined Matt Lauer and the rest of the staff on NBC’s Today Show to share with them a couple of great Fall recipes. Today I cooked for them my Jerk-Spiced Pork Chops and a Sweet Potato-Pumpkin Gratin. Sweet potatoes and pumpkin are great ingredients to use in any Fall dish; and Jerk seasoning is so versatile (can be used on chicken, beef, fish, or vegetables) that it’s a great recipe to have to use all year around. I had a great time this morning on NBC’s The Today Show sharing Back to Basics recipes from FoodRepublic.com. You can make an entire meal from these simple, basic, and delicious recipes for a burger, spicy ketchup, and homemade mayo. And there’s also the perfect side for a hearty burger: fries. I mixed it up with yucca fries, which taste great dipped into the spicy ketchup and homemade mayonnaise.
