I am currently on day 2 of a fabulous Juice Feast! This is my 5th juice feast. In the past I’ve done anywhere from 3 to 65 days on juice and the results are always amazing!
This is termed a ‘feast’ rather than ‘fast’ because one gets all the calories one would normally get in a day (i.e. 1500 for an average woman) – from at least 4 liters/1 gallon of fresh juice, daily (green vegetable juices, fruit juices and coconut water all included). Often when people fast they take in very small amounts of liquid/calories, the metabolism slows, their energy slumps, and they may feel quite ‘dysfunctional’. Juice Feasting works differently, supporting the feaster to be very functional in daily life and meeting all calorie needs, while experiencing massive cleansing on a cellular level. –source

2012 is in full swing! That means, back to work, school, and all of our regular responsibilities. One of the biggest obstacles in maintaining a healthy diet is time. We simply don’t have enough of it. Why would we spend hours slaving away when we can get carryout in 5 minutes?
What most people fail to recognize is that healthy food can also be fast food- like 5 minutes fast! All of my recipes are easy to make and typically take 30 minutes or less (usually less) to make. That’s because I’ve already heard all the excuses: “I don’t have time”, “I’m a busy parent, professional, student, business owner, volunteer, etc”, ”Healthy food is difficult to prepare”…the list goes on and on. Here’s to starting 2012 on the right foot! Did you slip up over the holidays? Not to worry, here’s a healthy and hearty recipe to help get back on track. It uses winter root vegetables- the perfect side dish for this season.
You can actually use any assortment of vegetables you like; cauliflower, broccoli, red potatoes, eggplant, acorn or butternut squash, brussel sprouts, parsnips, green beans, you name it! I had mine with a very simple salad and it was the perfect lunch meal. [click to continue…]

I love spaghetti squash! It’s seriously good with everything. This time I used it just like regular pasta by adding meatballs, marinara, goat cheese, basil and oregano but you could use it as a base for any pasta dish. You could also use it instead of rice or noodles with a stir fry or as a base for Indian curry, the possibilities are endless.
This is a yummy low fat, low carb, and (optionally) meatless meal that will make your heart sing. I promise even the pickiest eaters will love this dish. Kids love that they get to eat right out of the squash “bowl”. [click to continue…]

I don’t usually eat a lot of pasta. I find that most women don’t do well with refined carbohydrates in terms of weight loss and energy so I usually look for more creative types of pasta-inspired dishes that don’t call for refined wheat products. However, I’m a realist and let’s be honest, pasta is tasty! Plus, when done the right way it can be a really fast, easy, and healthy meal to have on occasion.
Recently, I found some really lovely Italian tortellini filled with sun-dried tomatoes, parmesan, basil, and a little sea salt. I love using imported Italian pastas not just because they taste amazing (which they do) but also because they are typically made very simply without any additives, preservatives, or chemicals. I’ll admit, I’m not a fish lover, never have been. But I must say, this recipe has made me a convert. The salmon turned out so tasty and moist and the flavor is so, so good! Plus, there are so many health benefits associated with wild caught salmon. Did you know:

One of my favorite things to eat in my past unhealthy life was Broccoli Cheese Soup. Preferably in a giant bread bowl from Panera. Delicious, but not so great for the waistline.
