
If I could eat one meal for the rest of my life, it would be a bacon, lettuce and tomato sandwich. Crispy bacon, sweet tomatoes and crunchy lettuce make a BLT ideal for any meal, but I’ve adapted it for those who don’t gravitate towards sandwiches for breakfast.
A BLT folds nicely into this version of Eggs Benedict, with lentils subbing in for lettuce to avoid sogginess. Since tomatoes aren’t quite in season, I cut them into thick slices and roasted them to enhance their sweetness. The earthy lentils nicely complement the salty bacon, and buttery, lemony Hollandaise sauce drizzled over the whole thing makes for a filling and decadent brunch. [click to continue…]

This might be one of the most satisfying recipes I have ever discovered. I found it in my grandmother’s cookbook and, at my mother’s suggestion (it was a favorite recipe from her childhood), tried it out.
My initial skepticism was twofold: first, I didn’t believe sugar and eggs could make a pancake, and second, I hear the word soufflé and I am immediately intimidated. But, in this case the process could not be easier.
The whole thing takes about twenty minutes, and there you are with a delicious breakfast or dessert! Double or triple the recipe if you would like to make 2-3 large pancakes for breakfast, depending on who you are cooking for, but as is this could serve 2-3 people as a dessert. I’m all about breakfast. Oats, polenta, pancakes, granola, bread. You name it, I make it. I love mixing it up in the mornings and while I do have my favorites I also have a pretty short attention span when it comes to recipes. I have an insatiable need to improve upon them and what better time to do this than first thing in the morning – I find it sets me up for the day and inspires my cooking and eating choices thereafter.
And if you thought overnight oats were over you are wrong! They are endlessly versatile and I never tire of thinking up various combos for mine. Weekends at our house usually involve pancakes. I couldn’t possibly contemplate making a batch during the week – I have enough trouble getting some oatmeal into me before invariably running for the train. Besides, pancakes, in my opinion, should be a treat and there’s nothing I look forward to more on a lazy Sunday than a small stack of fluffy pancakes – especially when paired with anything fruity.
Maple syrup is, of course, the classic accompaniment to pancakes and while I do love a good glug of this most delicious of pourable sugars, it’s much too expensive to be a regular inclusion on our shopping list.
Therefore, sauce improvisation has become second nature. It’s much cheaper, a smidgen healthier, and equally yummy.
And even though the weekends allow me more time to endlessly potter in my sanctuary (the kitchen!), I tend to keep prep and cook time to an absolute minimum, which is why whipping up a load of these babies mid-week wouldn’t necessarily be an impossibility. [click to continue…]

Let’s be honest, we sometimes wake up and all we crave is a slice of cake. Moist cake that will start your morning on the right foot, and when combined with your coffee creates a perfect pairing. This isn’t cake, but it’s the closest thing to it without making you feel guilty for eating sugary treats before 9am.
The combination of blueberries and chocolate are a definite new flavor pairing to me, and just because I need the extra dose of caffeine in the morning, I used 2 tablespoons of liquid coffee extract, which could be easily substituted with powdered instant coffee. [click to continue…]
