Homemade Pink Lady Applesauce Recipe

My roommate and best friend in college and I used to make applesauce all the time with apples we would “liberate” from the dining hall. We had so many in the house one day that we knew we could never eat before they went bad, so we threw them in a pot with a little bit of water and cinnamon.

This apple stew is lovely with a few different varieties of apple, but here I used my favorite kind, Pink Ladies. They have a natural tartness and bite, but an undeniable sweetness that make them perfect for making applesauce. Glazed Apple Muffins Recipe

I was tempted to give these muffins a ridiculously long winded name, as Glazed Apple Muffins doesn’t really cut it. Containing a multitude of random ingredients (my attempt at balancing the bad with good) these muffins are, shall we say, interesting?

I thought I pulled this recipe out of thin air, but then my mother revealed to me that she used to feed this to me as a baby. I don’t really remember eating this as a baby. In fact, I don’t really remember a lot of things that happened to me as a baby since, in my defense, I was a baby. But perhaps, this recipe was hidden somewhere in the back of my mind waiting to be pulled out and enjoyed. I think that’s probably what happened.
