Veggie Sandwich Recipe

A fast, easy option is always a nice, juicy vegetable sandwich! So easy to make, kids could help you put it together. This isn’t some boring veggie sandwich either, this tastes delightful! It’s both healthy and satisfying, the perfect combo. Who wants to eat healthy food that doesn’t taste good anyway?

For this recipe I used items that I already had in my kitchen. Feel free to make substitutions based on what you already have on hand.

Ingredients

2 slices toasted sprouted bread (Ezekiel is a common brand but there are several others. You can find sprouted bread in the freezer section of your grocery store.)
Assorted veggies: I used shredded carrots, avocado, tomato slices, cucumbers and sprouts
Hummus
Babaganoush
Italian dressing/vinaigrette

Directions

  1. Simply toast the sprouted bread and smear one slice with hummus and the other with Babaganoush. Then stack in your veggies.
  2. Finally add your sprouts tossed in vinaigrette. I used one of my favorite dressings, Garlic Expressions.
