Easy Salmon with Fennel and Shiitake Mushroom

This is a simple dish that goes well with any side.

Try it with this Kale Salad or these Roasted Root Vegetables (feel free to add a little berbere or cayenne to the roasting spices)

4 6-oz pieces of salmon

Small handful of parsley

1/2 cup chopped shitake mushrooms

2 shallots halved

2 cloves garlic, halved

half large fennel bulb , sliced

1/4 cup white wine

olive oil for drizzling

salt and pepper to taste

parchment paper


Cut parchment large enough for each piece of salmon to be wrapped and covered completely.

Combine the parsley, chopped shitake mushrooms, shallots, garlic and white wine in a small bowl.

Season each piece of salmon with salt and pepper.

Divide the fennel between the parchment paper and place each piece of salmon directly on top of the fennel. Then divide the mushroom mixture between each package. Drizzle each piece of salmon with olive oil.

Fold the edges of the parchment paper inward to cover the salmon and create a seal.

Place each sealed package on a baking sheet and place on the middle rack of an oven preheated to 350 degrees. Cook for about 20 minutes or until an instant read thermometer reads 145 degrees in the thickest part of the salmon.

Remove from oven and place the contents of each package on individual plates to serve.
