Morbier and Pinot Noir

WEEKEND WINE & CHEESE RECOMMENDATION

Cheese with a vein of vegetable ash may not sound appetizing at first, but one bite of the French treasure Morbier (More-be-ay) will change your mind. When opened, Morbier has a strong aroma but tastes pleasantly mild -- velvety and smooth with a distinctly nutty aftertaste.

Get the most out of your chunk of cheese by pairing it with a Pinot Noir. This professed favorite of Sideways' main character, played by Paul Giamatti, can have notes ranging from fruity to spicy without being too heavy. Each of these treats augment the smooth texture and delicate flavors of the other.

A cracked oat or pepper cracker would work well with the Morbier without outshining the Pinot Noir. Delicieux!
