The Brut version of this popular drink is a perfect match with Garrotxa, a cheese from the Catalonia region of Spain (pronounced GAH-ROW-CHA).
Garrotxa, covered in a blue-gray mold, is a dense, semi-soft treat is flavorful without being overpowering. It is made of goats milk -- Garrotxa is milky and creamy with hints of nuttiness. A light bread such as a baguette and an accompaniment of figs and honey are perfect with Cava and Garrotxa.
